Slow Cooker Chicken Teriyaki with Pineapple

Slow Cooker Chicken Teriyaki with Pineapple

I love Chicken Teriyaki and I LOVE Pineapple, So two of my favorite foods combined with some yummy veggies and rice make this another one of my families favorites.

Slow Cooker Chicken Teriyaki with Pineapple

Prep Time: 15 minutes
Cook Time: 4-6 hours
Ready in: 5-6 hours
Servings: 4

Ingredients:

  • 3-4 skinless, boneless chicken breasts
  • Teriyaki Sauce
  • 1 can (chunk) pineapple
  • brown sugar
  • Soy Sauce
  • 1 Broccoli bunch (chopped)
  • 20 baby Carrots
  • 2 cups of uncooked rice

 

Directions:

  • Dice the chicken and put into crockpot
  • Add enough teriyaki sauce to coat the chicken thoroughly, be sure to stir it around with the chicken and let it soak a bit while you are getting the pineapple ready
  • Open and drain pineapple (the juice is really good to drink! yum.)
  • Add the drained pineapple and stir
  • Add 1/4 cup of soy sauce
  • Add 2 tablespoons of brown sugar
  • Add Broccoli and carrots*
  • Stir all ingredients together and Check to make sure you don’t need to add more teriyaki sauce.
  • Cook on low for 4-6 hours
  • Check and add more Teriyaki sauce if needed
  • Cook rice
  • Serve over rice

 

*If you don’t want to add the veggies to the mixture, you can steam them while the rice is cooking. To steam them, add about 1/2-1 inch of water to the bottom of a small pot, and add broccoli/other veggies, and cover. Boil for 8-12 minutes or until tender.
