Parmesan Stuffed Sweet Peppers Recipe

Being a mom is a lot of work. Times that by four – and well – most of my day goes to cleaning, cooking, running my kids around, school work, cooking, errands, cleaning and did I say cooking? I spend a better part of the day just cleaning and cooking and sometimes I get tried of it and just stop for a day. That is when my husband comes home from work and looks around and asks “What happened?” lol. I love being a mom – but sometimes we need a break. I don’t always get one – so one of my goals this year is to find a balance. I need to get back to balance so that I have me time, family time, “maid” time, and work time. Since I want to do more and be more efficient I like to make simple but delicious sides and appetizers. These Parmesan stuffed sweet peppers are always a hit and taste delicious.

Sesame Chicken with Stuffed Sweet Peppers

The LEAN CUISINE® Sesame Chicken is amazing. I am so glad that it came in a portion-controlled container because if it was at an all-you-can-eat buffet I would have problems, lol. The sauce and the veggies with the pasta and chicken make a perfect combo.

Parmesan Stuffed Sweet Peppers

To go along with the LEAN CUISINE® Sesame Chicken I made Parmesan Stuffed Sweet Peppers. They are a great side or even snack (watch out – they go fast). We love to have them for parties (think football) and get together with friends and family. They are really easy to make and taste so good. Just take mini sweet peppers and cut the tops off, cut them in half, remove the seeds and lay them out on a cookie sheet. Then you will take fresh grated Parmesan cheese and stuff each one. Bake in the oven for about 8 minutes at 350 degrees and you have a great side dish.

Parmesan Stuffed Sweet Peppers

Prep Time: 5 minutes

Cook Time: 8 minutes

Total Time: 11 minutes

Parmesan Stuffed Sweet Peppers Recipe

Ingredients

  • 1 bag of mini sweet bell peppers
  • 1 bag of fresh Parmesan cheese

Instructions

  • Take the mini sweet peppers (as many as you want to make) and wash them.
  • Then cut the tops off, cut them in half, remove the seeds, and lay them out on a cookie sheet.
  • Take the fresh grated Parmesan cheese and stuff each one by filling it with cheese (adding bacon, sausage, or another kind of meat in the pepper would also be divine).
  • Bake in the oven for about 8 minutes at 350 degrees.

    Stuffed peppers would be a great idea to pair with sesame noodles. I bet that’s yummy!

    Wow, Lean Cuisine has it all! Breakfast to dinner in a snap, which is a lifesaver when you need a cooking break or you don’t care to have the mac ‘n cheese that the kids love!

    I totally agree–Lean Cuisine has a whole lot of different meals to choose from. They are perfect for a quick lunch or even a dinner (I am single!). I may try those stuffed sweet red peppers-they sound good.
