Sauteed Mushroom and Onion Dip Recipe

Game Day’s are always fun – but the best part is the food. I love watching the game and yelling at the TV, but you have to have good Game Day snacks and food or all else is lost 🙂 We like to have a variety of food from sweet to salty, finger foods and something a little more substantial for those with bigger appetites. This week we made Sloppy Joe Sliders and a sauteed mushroom and onion dip for the fries. Read on friends for this yummy recipe.

While I was at Walmart stocking up, I saw a mouth-watering selection of Alexia products and had to grab a few to try. I got the Sweet Potato Fries, Crinkle Cut Fries and the Crispy Onion Rings. If you are drooling just by looking at the picture – then you HAVE to taste them – they are so yummy! The onion rings were my kids’ favorite because they are so crunchy.  While you are at the store, be sure to grab the ingredients for the dip recipe below.

We found the Alexia products in the freezer section where the other potato products are. They have a lot of varieties. I have never been disappointed with Alexia and my favorites are the Sweet Potato fries and the Onion Rings.

For the Sloppy Joe Sliders you just make your sloppy joe recipe how you normally would and then add a layer of mayo, cheese, and then an Alexia Onion Ring. The crunch of the onion ring is the perfect addition to the slider.

For the Mushroom and Onion dip, we took a half carton of fresh mushrooms, and a half of a sweet onion and put them in a pan with 1-2 tbsp of butter and let them cook on MED heat until tender. As they were cooking I used my spatula to break/cut them into small pieces. This works better for the dip. When they are cooked, remove them from the pan (without the butter) and put them into a bowl. Add 1/2 cup of whipped cream cheese, 1/2 packet of dry Ranch salad dressing mix and seasoning to taste. Mix well. You can use a little of the butter for flavor and to make the dip more “runny” if desired. Mix well and enjoy!

We also made more of the Stuffed Sweet Peppers and added some of the sauteed mushrooms and onions to them with some Parmesan cheese sprinkled on top. Get that recipe here. They go great with the Alexia fries and onion rings. I love Game Day because it gives me an excuse to cheat a little – but with the Alexia products I know I am getting food that is better for me!

This would be a great addition to any Super Bowl party spread. It is nice to have something different.

Love fried up onion rings but they don’t always love me! That dip sounds really good-I would probably use it with a ridged potato chip.
